W1: CHEF THE MOVIE

I like starting this class with CHEF the movie written and directed by, and starring Jon Favreau.

If you've seen it before, you know it's good.

If you haven't seen it yet, I think that you are in for a story-telling treat.

Cardinals - this is not a way to use up time - I never get enough time with my students!

I show you this film because:

  • It's a low-key fun way to introduce the life of a chef to you. 
  • It's well-written, well-researched, well-acted, and filmed... and it's a real glimpse into the Industry. 
  • It's also a beautiful expression of family and food culture. 
  • Lastly, Week 1 is filled with a lot of fluctuations - students moving in and out of classes.
  • Week 1 lessons and lab are intended to review basic knowledge from Food Prep & Nutrition (like safety, sanitation, how to measure, how to mix, how to portion, how to hold a knife, how to set up a station, how to break-down a station, how to wash dishes, how to dry dishes, how how to garnish...) and we dive deeper as the weeks progress.
