W1: HOW TO SET UP FOR LAB @cheftinaluu
Since this is WEEK 1, we will start right at your work tables.
Please remember to keep your masks on covering both nose and mouth completely at all times in the classroom.
- Clear your tabletops 100%, put your backpacks under your work table or on the metro rack.
- Students will exposed skin may be asked to put on a chef's coat.
- Tie back your hair, put on a hat/hairnet and wash your hands Links to an external site..
- Choose ONE teammate to get a sanitizing bucket of hot soapy water and a micro-fiber (green striped) towel.
- Choose ONE teammate to wipe down the table and empty the bucket when the lab is done.
- Choose ONE teammate to get the ingredients.
- Choose ONE teammate to get the equipment.
Now, you have done your mise en place and are ready to execute your dish.
- Make the Chia Pudding following the recipe.
- Consolidate it into a container. Label (P#, T#) and Date and store in the refrigerator.
Break down the station:
- Choose ONE teammate to take away and do the dishes.
- Choose ONE teammate to wipe down, sanitize the table & rinse out the bucket.
- Choose ONE teammate to dry & put away dishes and equipment.
- Choose ONE teammate to sweep the floor and do a detailed check of clean-up.
If not all teammates are present for lab, the team contributes to getting it done. This is how we do it in the real world!
