Culinary Arts and Management I-IV are College Preparatory Courses (P): This course meets the University of California’s G (College Preparatory Elective) subject area requirement. This course provides entry-level training for careers in the culinary arts & hospitality and tourism industry. Instruction is given in planning, selecting, purchasing, storing, preparing, and serving quantity food & food products; preparing gourmet/ethnic foods, food styling & marketing, nutrition, quality control, safety, sanitation regulations, and use and care of commercial equipment. Completion of the course qualifies a student for a CA FOOD HANDLER’S CARD (upon completion of the exam). Work experience in all areas of hospitality is encouraged as part of the course curriculum. This course reinforces Common Core State Standards and California Career Technical Education model curriculum standards in a relevant applied setting. Students who complete this course with a grade of A or B are eligible to earn up to 7 units of community college credit.
